Some nouns can be countable and uncountable, as you said. The key is context. How is the word being used? In the case of bread, we usually use "loaf/ loaves" when we count, so many would be the answer if the question had that quantifying word in it: "How many loaves of bread do you buy each week?"
Without a quantifying expression, the general amount consumed is expressed as an uncountable noun:
1. How much coffee do you drink?
2. How much vitamin C does a person need?
3. How much bread do you eat?
4. How much water should we drink?
- - The answers can be count nouns, for example: I drink three cups of coffee each day.
